How to cook a pumpkin

Wash pumpkins. Cut into wedges. Clean out seeds. Place wedge on microwave safe plate. Microwave until pumpkin is soft. Cool and scoop pumpkin from skin. Place in blender and blend until smooth. Place pureed pumpkin in zip lock freezer bags - 2 cups each. Pumpkin is cooked and ready to use.


Pumpkin Bread

2 c pumpkin
4 eggs
3 c sugar
3 1/2 c flour
1 c oil
2/3 c water
1 1/2 t salt
1 1/2 t cinnamon
2 t soda
1 c pecans
1/2 t cloves
1/2 t nutmeg

Mix pumpkin, eggs, water, and oil. Add dry ingredients. Bake 1 hour in well greased bread pan 350 degrees. Wait 10 minutes to remove


Pumpkin Pie

2 c pumpkin
3/4 sugar
1/2 t salt
2T pumpkin pie spice
3 eggs slightly beaten
large can of evaporated milk

Thoroughly combine pumpkin, sugar, salt, and spices. Add eggs and milk, blend. Pour into medium pie crust and bake at 450 for 10 minutes and then 325 for about 45 minutes or until knife comes out clean
